One of the seminars at the KBBA Conference will be:
Cook Smart -- Serve with Flair!
Presented by Larry Stevens (Dickey House Bed & Breakfast, Marshfield, MO)
With the turndown in the economy, many of us have fewer guests than we are accustomed to hosting, and some inns are just not as busy as others. This workshop offers tips on how to cook for fewer guests with a little flair, maintain quality, save dollars at the market and still serve a great breakfast.
How do you purchase, store and cook for only 2 or 4 guests?
What staples should you keep on hand?
What are the secrets of storing and keeping staples fresher longer?
How can you keep supplies on hand if you only occasionally host guests?
By special request, I will also discuss how to design a "signature" dish for your inn. You may want to have more than one!
